| Chinese Fried Rice 1/2 c Finely diced cooked ham; chicken or pork
2 tb Oil or shortening
2 c Cold cooked rice
2 tb Soy sauce
3 Mushrooms; sliced
1 Chopped green onion
1 Egg; well beaten
Fry diced cooked meat lightly in oil. Add mushrooms, cold rice, onion and
soy sauce. Fry over low heat 10 minutes. Add well beaten egg. Cook and stir
5 minutes more. Makes 6 to 8 servings. |
