| | Chinese Rice Salad 1 c Converted long grain rice
1 c Frozen peas, thawed, uncooked
1 c Celery, finely chopped
1/2 Spanish onion, finely chopped
1 c Shrimp, cooked or canned
4 oz Chow mein noodles
Dressing:
1/4 c Oil
2 tb Vinegar
1 1/2 ts Soy sauce
1/2 ts Curry powder
1/2 ts Salt
1 1/2 ts Sugar
1/2 ts Celery seed
Cook the rice according to directions; chill. This can be done a day
ahead. Add peas, celery, onion, and shrimp on the day of serving.
Put the dressing ingredients into a jar and shake well. Just before
serving, add dressing to salad a few spoonsful at a time until salad
appears moist enough. Add the noodles and toss. Serves 8 | |
