 Cold Shrimp and Rice Salad

1 cup raw rice
3 scallions
1 bunch chives
1/2 medium onion
1 1/2 cups small cooked Shrimp
1 cup mayonnaise
Pinch of ginger
Salt and lemon juice to taste

Cook rice per package directions (Minute Rice is not good for this recipe). Chop scallions, chives and onions finely. In large bowl put in cooled rice; add scallions, chives, onions, Shrimp and mayonnaise; mix well. Add pinch of ginger, salt and lemon juice to taste. Serve cold.
