| Country Rice Pudding 2 c Rice; cooked
1 1/2 c Milk
1/8 ts Salt
3 Eggs; beaten
1 ts Vanilla
1/2 c Brown sugar
1 ts Butter
1 ts Grated lemon rind & juice
1/2 c Raisins
1 c Crushed cookies
Preheat oven to 325F. In a bowl combine two cups cooked rice, milk,
salt and remaining ingredients, except the cookies. Blend
continously. This is more a folding action to avoid smashing the
rice. Lightly oil the bottom of a baking dish. Pour in the mixture.
Cover with crushed cookies. Bake for 45 minutes. |
